Prepare the Chicken:
Preheat your smoker or grill to 225°F (107°C) for indirect cooking.
In a small bowl, mix together the dry rub ingredients.
Rub the chicken with olive oil or a thin layer of mustard (this helps the rub stick better).
Generously coat the chicken breasts or thighs with the Blackbeard’s Spice - Small Batch X dry rub on all sides, pressing it into the meat.
Smoke the Chicken:
Place the seasoned chicken on the smoker or grill, away from direct heat.
Close the lid and smoke the chicken for about 2 hours, or until the internal temperature reaches 165°F (74°C). Check occasionally to ensure the wood chips are still smoking, and replenish as needed.
Prepare the Sweet and Saucy BBQ Glaze:
While the chicken is smoking, make the glaze. In a small saucepan over medium heat, combine the barbecue sauce, honey, apple cider vinegar, soy sauce, Dijon mustard, and cayenne pepper (if using).
Simmer the sauce for about 5-10 minutes, stirring occasionally until it thickens slightly and the flavors meld together. Remove from heat and set aside.
Glaze the Chicken:
Once the chicken has reached 165°F (74°C), remove it from the smoker and brush it generously with the sweet BBQ glaze.
Return the chicken to the smoker or grill and cook for another 10-15 minutes, allowing the sauce to caramelize and get sticky.
Assemble the Sandwiches:
Lightly toast the buns on the grill for about 1-2 minutes.
