These smash burgers are quick, delicious, and perfect for any occasion! Enjoy with crispy fries or a cold drink for the ultimate burger experience.
Ingredients

1 lb ground beef (80/20 blend for optimal juiciness), divided into four 1/4 lb portions

Blackbeard’s Spice (Calico Jack Seasoning)

1 large onion, thinly sliced

Dill pickle slices

Yellow mustard, to taste

4 burger buns

4 tablespoons unsalted butter, softened
Directions
Set Up the Griddle:
Preheat your griddle by setting the two burners on the left to medium heat to create a hot zone, and the two burners on the right to low heat for a cooler zone.
Prepare the Buns:
Spread a thin layer of softened butter on the inside of each bun.
Place the buttered buns on the right, cooler zone of the griddle.
Toast them until golden brown, about 1-2 minutes, then remove them from the griddle and set aside.
Form the Beef Balls:
Divide the ground beef into four 1/4 lb portions.
Roll each portion into a loose ball.
Cook the Smash Burgers:
Place the 1/4 lb beef balls on the hot zone (left side) of the griddle.
Immediately lay a pile of thinly sliced onions on top of each beef ball.
Using a heavy spatula or a burger press, smash the beef balls to your desired thickness, pressing the onions into the beef.
Lightly season this side with Calico Jack seasoning.
Grill the patties on the hot zone for 2-3 minutes until the edges are crispy.
Flip the patties and continue cooking until they reach your desired doneness.
Assemble the Burgers:
Spread your desired amount of yellow mustard on the bottom half of each toasted bun.
Place the onion-topped patty on top of the mustard.
Add dill pickle slices.
Top with the other half of the bun.
Serve:
Serve the smash burgers hot, straight from the griddle.
